Working along side our Scottish mainland supplier we source the best quality sea trout, which we use for our hot smoked product.
The fish are carefully filleted and brined in our own unique brine. The fish are then cold smoked over beech wood chips to give us a subtle not overpowering flavour. Finally we hot smoke the fish to finish off the process and seal in all that great taste.
