With our Scottish mainland supplier, we find the best quality trout. We cure them with our special recipe and gently smoke the fish over beechwood to give the fish a subtle and light, but distinctive taste. We then hand slice the fish. As we hand slice, not all our slices are uniform, some are thicker and some thinner. We make no apologies for this. We believe that it adds to your eating experience of our great product. Enjoy!
